Local legend describes a monk seen wandering the castle grounds carrying an apple, and no source consulted for this entry offers any theory as to why, whether the apple relates to some lost incident from the castle's monastic or medieval past or is simply an oddly specific piece of folk embellishment that has stuck because of its very strangeness.
Beyond the monk himself, a former mayor of Hertford reported lights in the building switching on and off apparently without human intervention, along with the sound of a dog barking somewhere on the grounds despite repeated searches turning up no actual animal. A separate and more recent account describes a local council meeting held in the castle being interrupted by repeated tapping on the walls, a sound whose source those present were never able to locate despite investigating at the time.
